  • 1.5 lb salmon fillet (skin on)
  • Zest and juice from 1 large orange
  • 1/2 T olive oil
  • 1 T brown sugar
  • 1 tsp chipotle chili powder
  • 1/2 tsp cumin
  • Kosher salt and freshly ground black pepper

Instructions

  1. Soak a cedar plank in beer and water for at least 4 hours (overnight is best).
  2. In a mixing bowl, whisk together orange zest, juice, olive oil, brown sugar, chipotle powder, and cumin.
  3. Remove the salmon from the fridge and place it skin-side down on the soaked plank.
  4. Rub the marinade over the salmon and sprinkle with salt and pepper. Top with orange slices.
  5. Preheat grill to medium-high heat (about 415°F). Place the cedar plank on the grill and cook for 25-30 minutes or until the salmon flakes easily with a fork.
