  • 1 large piece of flank steak (up to 3 pounds)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 T soy sauce
  • 1/2 tsp ground chipotle chile powder
  • Fresh parsley (for garnish)

Instructions

  1. In a bowl, combine lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, and chipotle powder. Mix well.
  2. Place flank steak in a Ziploc bag and pour marinade over it. Seal the bag tightly and refrigerate for at least 8 hours or up to 24 hours.
  3. Remove steak from fridge about 30 minutes before grilling to reach room temperature.
  4. Preheat the grill to medium-high heat and oil the grates.
  5. Grill the steak for about 4-6 minutes per side until desired doneness is reached (medium-rare: 140-145°F).
  6. Let steak rest for 5 minutes before slicing against the grain.
  7. Serve hot, garnished with fresh parsley and lime wedges.
