  • ⅔ cup cilantro leaves (chopped)
  • Zest from 1 large orange
  • Juice from 2 large oranges (about ½ cup)
  • Juice from 4 limes (about ⅓ cup)
  • 3 tablespoons chopped fresh mint leaves
  • 6 cloves garlic ( minced)
  • 1 teaspoon dried oregano
  • 1½ teaspoons ground cumin
  • 1 teaspoon Kosher salt
  • 1 teaspoon fresh ground black pepper
  • 2 (1-pound) beef tenderloins (silver skin removed)
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. In a mixing bowl, combine olive oil, cilantro, orange zest, lime juice, mint leaves, minced garlic, oregano, cumin, salt, and pepper. Whisk until well blended.
  2. Place beef tenderloins in a resealable bag or shallow dish and pour marinade over them. Ensure they are fully coated and refrigerate overnight.
  3. Preheat grill to medium-high heat (400°F). Lightly oil the grates.
  4. Remove beef from marinade and grill each side for about 6–8 minutes or until desired doneness is reached (135°F for medium-rare).
  5. Let the grilled beef rest for 5–10 minutes before slicing against the grain. Garnish with parsley.
