  • 1/2 small avocado, pitted and diced
  • 2 tablespoons finely chopped fresh cilantro
  • Juice of 1 lime half
  • Kosher salt
  • 1/2 medium red onion, thinly sliced
  • Juice of 2 limes (plus wedges for serving)
  • Kosher salt and freshly ground pepper
  • 1 teaspoon tajin
  • 1/4 teaspoon chili powder (divided)
  • Olive oil spray
  • 1 1/2 pounds jumbo raw shrimp, shelled and deveined
  • 1/4 teaspoon kosher salt (plus more for salsa)
  • 1/8 teaspoon cayenne pepper
  • 8 6-inch corn tortillas
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Soak wooden skewers in water (if using) for at least 20 minutes.
  2. Pickle the onions by mixing thinly sliced red onion, lime juice, and salt in a bowl.
  3. In another bowl, prepare the peach salsa by combining diced peach, avocado, cilantro, lime juice, chili powder, and salt.
  4. Preheat the grill to medium-high heat and lightly oil it.
  5. Season the shrimp with olive oil spray, tajin, kosher salt, and cayenne pepper. Thread onto skewers if desired.
  6. Grill shrimp for 2-3 minutes per side until pink and firm; set aside.
  7. Char corn tortillas on the grill for about one minute on each side.
  8. Assemble tacos by placing shrimp on tortillas and topping with peach salsa and pickled onions.
