  • 2 medium zucchini (sliced)
  • 2 cups cherry tomatoes (halved)
  • 2½ cups corn kernels
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic (minced)
  • ½ cup crumbled goat cheese
  • Fresh arugula for serving

Instructions

  1. Preheat grill to medium-high heat (425°F) and oil the grates.
  2. Drizzle zucchini with olive oil, season with salt and pepper, and grill for 2–3 minutes per side until tender.
  3. In a grill pan, toss cherry tomatoes and corn with olive oil, season, and cook on the grill for about 2–3 minutes until charred.
  4. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper for the dressing.
  5. Add grilled zucchini, tomatoes, corn, arugula to the bowl; toss to coat in dressing. Top with goat cheese before serving.
