  • 175 g Baking spread (or butter)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat the oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with black cupcake cases.
  2. Beat together baking spread and caster sugar until fluffy. Add eggs and vanilla; mix well.
  3. Fold in self-raising flour and black food coloring until fully combined.
  4. Fill the cupcake cases with batter and bake for 25-30 minutes until a skewer comes out clean. Cool on a wire rack.
  5. Once cool, remove cupcake centers, fill with colored custard, then frost with green buttercream.
  6. Decorate each cupcake with candy eyes and sprinkles.
