  • 1 1/2 lbs boneless skinless chicken breast
  • 1/4 cup coconut aminos or soy sauce
  • 1/4 cup pineapple juice
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • 2 cloves garlic minced
  • 2 teaspoons sesame oil
  • 1/2 teaspoon kosher salt
  • 2 red bell peppers
  • 1 medium red onion
  • 1 (20 oz) can pineapple chunks
  • Fresh parsley for garnish
  • 1215 wooden skewers
  • 1 teaspoon cornstarch or tapioca flour (reserved until the end)

Instructions

  1. Prepare the marinade by whisking together coconut aminos, pineapple juice, honey, ginger, garlic, sesame oil, and salt. Marinate the chicken in half of this mixture for at least one hour.
  2. Soak wooden skewers in warm water for 30 minutes to prevent burning.
  3. Assemble kabobs by alternating pieces of chicken, onion, bell peppers, and pineapple on each skewer.
  4. Air fry at 400°F for 12-15 minutes or broil on high for added char.
  5. Heat the reserved marinade until thickened and brush it over the cooked kabobs before serving.
