  • 1/4 cup Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
  2. In a bowl, mix pumpkin puree, maple syrup/honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Slowly fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Fill each muffin liner about two-thirds full with batter.
