  • 3 tablespoons sugar
  • 1.5 tablespoons cornstarch
  • Pinch of salt
  • 2 teaspoons fresh lemon juice
  • 1 package of pie crust (2 in a pack)
  • 1 egg (for egg wash)
  • 1 tablespoon water
  • 3/4 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Prepare the blueberry filling by cooking fresh blueberries with sugar and cornstarch until thickened; stir in lemon juice.
  2. Preheat your oven to 425°F (220°C) and line baking sheets with parchment paper.
  3. Roll out the pie crust and cut into circles; place filling on half, top with another circle, and crimp edges to seal.
  4. Brush tops with an egg wash and bake for about 20 minutes until golden brown.
  5. Make glaze by mixing powdered sugar with milk; drizzle over cooled hand pies before serving.
