  • ½ cup very cold heavy cream
  • 2 large eggs (1 egg + 1 yolk)
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • Pinch of kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup

Instructions

  1. Prepare ingredients by chilling butter, cream, and eggs.
  2. Mix dry ingredients in a food processor and pulse until combined.
  3. Add cold butter and pulse until the mixture resembles coarse crumbs.
  4. Gradually add the chilled cream and egg mixture until just combined.
  5. Shape the dough into a disc, wrap in plastic wrap, and freeze for about 30 minutes.
  6. Roll out dough to desired thickness, cut into shapes, then place on a baking sheet.
  7. Preheat oven to 375°F (190°C) and brush scones with egg wash before baking for 20–22 minutes until golden brown.
