  • 1 packet (1 oz) taco seasoning
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat your oven to 375°F and prepare two baking sheets by lightly spraying them with non-stick spray.
  2. Arrange three tortillas on each baking sheet and bake for 3-5 minutes until golden. Flip and bake for another 2-5 minutes until crispy.
  3. In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.
  4. Stir in taco seasoning and water; bring to a boil then simmer for about 10 minutes.
  5. Warm refried beans in a microwave-safe bowl for 1-2 minutes.
  6. Spread a layer of warmed beans on one tortilla, top with beef mixture, add another tortilla, then spread enchilada sauce and sprinkle cheeses along with your chosen toppings.
  7. Repeat layering with remaining ingredients before baking for an additional 5 minutes until the cheese is bubbly.
