  • 3 medium sweet potatoes
  • 2 apples
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Optional: chopped toasted pecans for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place un-pierced sweet potatoes on a baking sheet and bake for 40-45 minutes until soft. Allow to cool before handling.
  3. While cooling, peel, slice, and core the apples; drizzle with lemon juice if desired.
  4. Remove the sweet potato skins and cut into 1/2-inch thick slices.
  5. In an 8×8 or 9×9 baking dish, layer apple slices and sweet potato slices alternately.
  6. In a small saucepan, melt together honey, butter, cinnamon, and vanilla over low heat until combined.
  7. Toast chopped pecans on a parchment-lined baking sheet under broil for about 5 minutes until fragrant.
  8. Pour the honey mixture over the layered casserole and sprinkle with toasted pecans if using. Bake at 350°F (175°C) for 15-20 minutes until heated throughout.
