  • 2 apples
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Chopped toasted pecans (optional for garnish)

Instructions

  1. Preheat your oven to 375°F.
  2. Place un-pierced sweet potatoes on a baking sheet and bake for 40-45 minutes until soft. Allow to cool before handling.
  3. Peel, slice, and core the apples; set aside.
  4. Remove the skin from cooled sweet potatoes and cut them into 1/2-inch thick slices.
  5. In an 8×8 or 9×9 baking dish, layer apple slices and sweet potato slices alternately.
  6. In a small saucepan over low heat, melt together honey, butter, cinnamon, and vanilla until smooth; pour over layered fruits.
  7. If using, chop pecans and toast on a parchment-lined baking sheet under broil for about 5 minutes until fragrant.
  8. Sprinkle toasted pecans on top (if desired) and bake at 350°F for an additional 15-20 minutes.
