  • 23 lbs boneless beef chuck roast
  • 4 dried guajillo chiles (seeds removed)
  • 10 corn tortillas
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium beef broth

Instructions

  1. Preheat oven to 325°F (160°C). In a large pot, combine beef chuck roast, water, onion, garlic, and guajillo chiles. Bring to boil, then reduce heat and simmer covered for about 3 hours until tender.
  2. Remove meat, let cool slightly; strain broth into blender with some cooked chiles and blend until smooth.
  3. Shred beef into bite-sized pieces; return to pot with blended sauce.
  4. Warm each tortilla in a skillet. Fill tortillas with shredded beef mixture, roll tightly, and place seam-side down in a baking dish.
  5. Pour additional sauce over enchiladas; sprinkle cheese if desired. Bake uncovered at 350°F (175°C) for 15-20 minutes until heated through.
  6. Serve garnished with cilantro, diced onions, or lime wedges.
