  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream
  • 8 oz dark chocolate (70% cocoa), melted
  • 2 cups fresh cherries, pitted and halved

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  2. Melt dark chocolate in short bursts in the microwave until smooth; set aside.
  3. In a large bowl, beat cream cheese and sugar until creamy. Stir in melted chocolate until well combined. Gradually add heavy cream and blend until smooth.
  4. Gently fold in halved cherries, then pour filling over crust.
  5. Bake for 50-60 minutes or until set but slightly jiggly in the center.
  6. Cool at room temperature for one hour before refrigerating for at least four hours or overnight. Garnish with additional cherries before serving.
