  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup fresh lemon juice
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a greased baking dish.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add remaining sugar and blend well.
  3. Add eggs one at a time, mixing well after each addition. Stir in fresh lemon juice until smooth.
  4. Pour cheesecake filling over the crust and bake for 25-30 minutes or until slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least two hours. Cut into bars and serve chilled.
