  • 1 cup crushed graham crackers
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 (3.4 oz) package instant pistachio pudding mix
  • 2 cups milk
  • 8 oz whipped topping, thawed
  • ½ cup crushed pistachios (for garnish)

Instructions

  1. Prepare the crust by mixing crushed graham crackers with melted butter in a bowl. Press firmly into the bottom of an ungreased baking dish.
  2. In another bowl, beat softened cream cheese with sugar until smooth. Fold in half of the whipped topping and spread over the crust layer.
  3. Whisk together the pistachio pudding mix with milk according to package directions until thickened. Spread this mixture evenly over the cream cheese layer.
  4. Spread the remaining whipped topping over the pudding layer for a fluffy finish.
  5. Garnish generously with crushed pistachios on top.
  6. Cover and refrigerate for at least four hours or overnight before serving.
