  • 1 cup granulated sugar
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, blend melted butter and sugar until combined. Gradually add flour to form a crumbly dough; press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition; stir in vanilla.
  4. Gently fold in raspberries and pour over the crust in the baking pan.
  5. Bake for 35-40 minutes until the edges are set and slightly golden. Let cool completely before slicing into bars.
