  • 1 cup fresh raspberries (or thawed frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture alternately with milk to the wet ingredients until just combined.
  4. In a separate bowl, mash raspberries until smooth; consider adding sugar for extra sweetness.
  5. Fill cupcake liners two-thirds full with batter, then dollop raspberry puree on top and swirl gently using a toothpick.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow cooling before serving.
