  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 1 package (7 oz) ladyfingers
  • 1/2 cup raspberry juice or syrup

  1. Melt white chocolate using a double boiler or microwave until smooth.
  2. In a mixing bowl, combine melted white chocolate and mascarpone cheese until well blended.
  3. In another bowl, whip heavy cream until soft peaks form, then gently fold into the mascarpone mixture.
  4. Dip ladyfingers briefly in raspberry juice, layer half at the bottom of a serving dish, and spread half of the mascarpone filling over them.
  5. Add half of the fresh raspberries, then repeat with another layer of dipped ladyfingers and remaining filling.
  6. Cover and refrigerate for at least four hours or overnight before serving.
