  • 16 oz farfalle pasta
  • 1 cup fresh mozzarella cheese (cubed)
  • 1 ½ cups black olives (pitted)
  • 1 pint cherry tomatoes (halved)
  • 2 tbsp fresh parsley (chopped)
  • ½ red onion (diced)
  • 1 green pepper (chopped)
  • ½ cup halal salami (cut into quarters)
  • ¾ cup extra virgin olive oil
  • ¼ cup white apple vinegar
  • 2 tsp lemon juice
  • 2 minced garlic cloves
  • 3 tbsp grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the farfalle pasta according to package instructions. Drain and rinse under cold water until cool.
  2. In a large bowl, combine the cooked pasta with mozzarella, black olives, cherry tomatoes, parsley, red onion, green pepper, and halal salami.
  3. In a small bowl, whisk together olive oil, vinegar, lemon juice, garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Pour the vinaigrette over the pasta mixture and toss until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
