  • Italian seasoning
  • 4 cloves garlic (pressed)
  • 1 can whole tomatoes (chopped)
  • 1 can navy beans (drained and rinsed)
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Fresh parsley and lemon juice for garnish

Instructions

  1. Cook gnocchi according to package instructions; set aside.
  2. In a large soup pot over medium-high heat, add oil; once hot, crumble in the sausage and brown.
  3. Stir in leeks, fennel, parsnip, carrot, and celery. Season with salt, pepper, and Italian seasoning; sauté until tender.
  4. Add garlic, tomatoes, navy beans, and chicken broth; stir to combine.
  5. Cover and simmer for about 20 minutes until vegetables are tender. Stir in kale, parsley, and lemon juice before serving.
