  • 69 tablespoons ice water
  • 1 egg (for egg wash)
  • 1/4 cup raw or turbinado sugar (for sprinkling)
  • 2 large honey crisp apples (peeled and diced small)
  • 3 tablespoons salted butter
  • 2 tablespoons brewed barley tea
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt in a stand mixer; incorporate cold butter until crumbly. Add ice water gradually until dough forms.
  2. Chill the dough for at least one hour.
  3. Make the apple filling by cooking diced apples with butter, brewed barley tea, vanilla bean paste, cinnamon, and brown sugar until syrupy.
  4. For the blackberry filling, roast blackberries and combine them with sugar and vanilla extract until thickened.
  5. Roll out chilled dough, cut into pumpkin shapes, fill with desired fruit filling, seal edges, and bake until golden brown.
