  • 1/4 cup table salt
  • 4 cups water
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced and seeded
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • coarse ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Brine the Beef Chops: In a large container, dissolve salt in water and submerge the beef chops. Brine for at least 30 minutes up to 2 hours.
  2. Make the Glaze: In a small saucepan over low-medium heat, combine apple vinegar, peach jam, jalapeno, and red pepper flakes. Simmer until thickened; stir in butter.
  3. Season Chops: Remove beef from brine, pat dry, and season generously with black pepper.

  5. Glaze the Chops: Brush glaze onto the chops when they reach an internal temperature of 135°F; continue grilling until reaching 145°F.
