  • 1/3 cup pine nuts
  • 2 handfuls baby arugula
  • 1/3 cup freshly grated parmesan cheese
  • 1/4 cup fresh basil leaves
  • Zest and juice of 2 lemons
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. Toast the pine nuts in a dry skillet over medium heat until golden brown. Set aside.
