  • 2 chicken breasts (cubed)
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by slicing the chicken and halving the tomatoes.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, cooking until golden brown (5–7 minutes). Remove from skillet.

  5. Add gnocchi, cooking for an additional 3–4 minutes until tender. Toss in spinach just before serving.
