  • 2 tablespoons butter (melted)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian parsley leaves (chopped)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper
  • Optional garnish: 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 350°F (176°C). Prepare baby potatoes by cutting slits without slicing all the way through.
  2. In a mixing bowl, combine olive oil, melted butter, minced garlic, chopped parsley, lemon juice, honey, salt, and black pepper. Mix well.
  3. Place the prepared potatoes in a roasting pan and generously coat with the oil mixture using a pastry brush, ensuring to fill the slits.
  4. Roast in the preheated oven for about 1 hour, basting with reserved oil mixture every 30 minutes. Serve hot.
