Ingredients

  • Unsalted butter

  • Granulated sugar
  • Eggs
  • Cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, flour, brown sugar, and salt. Melt the butter and mix it into the dry ingredients until crumbly.
  3. Press half of this mixture firmly into a greased 9×9-inch baking pan. Set aside the remaining crumble for topping.
  4. In another bowl, whisk together lemon juice, lemon zest, granulated sugar, and eggs until smooth. Stir in cornstarch and pour over the crust.
  5. Sprinkle the reserved crumble evenly on top and bake for about 38 minutes or until golden brown.
  6. Allow to cool completely before cutting into bars.
