  • 1 cup roasted or raw almonds
  • 1/2 cup pitted dates
  • 2 cups raw cashews
  • 150g mango chunks
  • 3/4 cup thick dairy-free yogurt
  • 1/3 cup maple syrup
  • 1/3 cup melted cacao butter
  • 1/4 cup lemon juice
  • 200g additional mango chunks
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup passionfruit pulp

Instructions

  1. Line an 8-inch square cake pan with parchment paper.
  2. In a food processor, blend almonds until crumbly. Add dates and blend until sticky.
  3. Press the mixture into the bottom of the prepared pan to form the base.
  4. In a high-speed blender, combine soaked cashews and remaining filling ingredients; blend until smooth.
  5. Pour the filling over the base and smooth it out. Refrigerate for at least 4 hours to set.
  6. For the topping, puree additional mango and heat with passionfruit pulp and cornstarch until thickened; pour over chilled bars.
  7. Return to fridge for another 30 minutes before slicing into servings.
