  • 12 oz chopped tomatoes
  • 56 oz seedless cucumber (chopped)
  • 1/2 cup diced red onion
  • 3/4 cup olive oil
  • 2 TBSP apple vinegar
  • 2 TBSP balsamic vinegar
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions
