  • 2 tablespoons olive oil
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat dry the fish fillets and season both sides with salt, black pepper, and dried oregano.
  4. In a skillet over medium heat, heat olive oil and sauté onions until translucent. Add bell peppers and zucchini; cook until tender. Stir in garlic for an additional minute.
  5. Spread vegetables in the baking dish, place fish on top, and scatter cherry tomatoes, parsley, dill, lemon juice, and zest over everything.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5–10 minutes until the fish flakes easily.
