- 4 whole fish fillets (such as snapper or cod)
- Salt and black pepper to taste
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- 1 onion (sliced)
- 1 bell pepper (sliced)
- 1 zucchini (sliced)
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- Zest and juice of 1 lemon
- 1/4 cup fresh parsley (chopped)
- 1 tablespoon fresh dill (chopped)
- Preheat the oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- Season the fish fillets with salt, black pepper, and dried oregano.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add bell peppers and zucchini until tender. Stir in minced garlic.
- Spread sautéed vegetables in the baking dish and place seasoned fish on top.
- Top with cherry tomatoes, parsley, dill, lemon juice, and zest.
- Cover with aluminum foil and bake for 20 minutes; then uncover and bake for an additional 5-10 minutes until fish flakes easily.
- Let cool slightly before serving warm with optional crusty bread or salad.
