  • 1 (15 fluid ounce) can white (cannellini) beans (drained & rinsed)
  • 2 mini cucumbers
  • 10 ounces little tomatoes (halved)
  • 1/3 cup Kalamata olives (pitted & chopped)
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon red apple vinegar
  • Fresh parsley
  • Dried oregano
  • Salt & pepper

Instructions

  1. Rinse the canned white beans under cold water.
  2. Chop the cucumbers, red onion, red bell pepper, and halve the tomatoes.
  3. In a mixing bowl, combine chopped veggies with rinsed beans, olives, parsley, oregano, and feta cheese.
  4. Drizzle olive oil and red apple vinegar over the mixture; season with salt and pepper to taste.
