Ingredients

Scale
  • 1/2 cup sugar
  • 1 1/4 cups unsalted butter (softened)
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 28 ounces sweetened condensed milk (two 14-ounce cans)
  • 6 ounces dark chocolate (60% cacao, coarsely chopped)
  • 1 teaspoon light corn syrup
  • Sea salt (for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream the softened butter and sugar until fluffy. Gradually add flour and salt; mix well before incorporating the beaten egg yolk. Press the mixture into a greased 9×13-inch baking dish.
  2. Bake the base for about 20 minutes or until lightly golden. Allow it to cool slightly.
  3. For the caramel layer, combine sweetened condensed milk, corn syrup, and butter in a saucepan over medium heat. Stir continuously until thickened into caramel consistency. Pour over the cooled shortbread base.
  4. Melt dark chocolate in a microwave-safe bowl or double boiler until smooth; pour over the caramel layer and spread evenly.
  5. Finish by sprinkling sea salt on top. Let cool completely before cutting into bars.
