  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté onion and bell pepper for 3–4 minutes until softened. Stir in garlic and cook for an additional 30 seconds.
  3. Add smoked paprika and black pepper; then stir in uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce, combining well before returning the sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender and liquid is absorbed.
  6. Let rest for 5 minutes before fluffing with a fork. Garnish with parsley if desired.
