  • 16 oz uncooked orzo pasta
  • 1/4 cup lemon juice
  • 1/2 red onion (chopped)
  • 2 ears grilled corn (cut off the cob)
  • 1 English cucumber (sliced)
  • 1 red bell pepper (chopped)
  • 1 pint cherry tomatoes (halved)
  • 1 can garbanzo beans (drained and rinsed)
  • 1/2 cup pitted Kalamata olives (halved)
  • 1/2 cup sliced almonds
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup feta cheese
  • Olive oil and vinegar for dressing

Instructions

  1. In a jar, combine dressing ingredients: olive oil, vinegar, lemon juice, herbs, salt, pepper, sugar, and Dijon mustard. Shake well and refrigerate.
  2. In a large nonstick skillet over medium-low heat, melt butter with olive oil. Add orzo pasta and chopped onions; sauté for 3–5 minutes until onions are soft.
  3. Pour in chicken broth and lemon juice; season with salt and pepper. Simmer for about 8–10 minutes until orzo is al dente.
  4. Transfer cooked orzo to a bowl; once cooled, mix in all remaining salad ingredients.
  5. Pour dressing over salad; toss gently to combine. Taste and adjust seasoning as needed.
