  • 1 cup sugar
  • 2 tablespoons plus 2 teaspoons fresh lemon juice

Instructions

  1. In a heavy nonreactive skillet, combine sugar, lemon juice, vanilla extract, and cloves. Cook over medium heat until sugar dissolves (about 5 minutes).
  2. Add chopped peaches and stir to coat. Increase heat to medium-high until simmering. Cook for 15-20 minutes, stirring occasionally until thickened.
  3. Mash peaches with a potato masher to achieve desired consistency. Remove from heat and stir in remaining lemon juice. Let cool before refrigerating.
