  • 4 peaches (1 cut into wedges, 3 chopped)
  • 200g raspberries
  • 100ml vanilla extract (water-free)
  • 200ml peach juice
  • 1 Madeira cake
  • 23 tablespoons seedless raspberry jam
  • 250g mascarpone
  • 4 tablespoons lemon curd
  • 300ml double cream

Instructions

  1. In a bowl, mix chopped peaches and raspberries with vanilla extract and peach juice. Set aside.
  2. Slice Madeira cake and spread raspberry jam between slices. Cut into fingers or cubes.
  3. Layer cake cubes in serving glasses, followed by the fruit mixture.
  4. Blend mascarpone with lemon curd in one bowl; whip double cream separately until soft peaks form.
  5. Fold whipped cream into the mascarpone mixture and layer on top of the fruit and cake.
  6. Top each trifle with whipped cream and garnish with peach wedges before serving.
