  • 4 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 3 tablespoons water
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger
  • juice of 2 limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 1 tablespoon rice vinegar (optional)
  • 1 teaspoon cornstarch (optional)
  • 2 tablespoons sesame oil
  • 1 lb. ground chicken or turkey
  • 1/2 cup lightly salted peanuts, chopped
  • 6 ounces rice noodles
  • 12 leaves of Boston lettuce
  • chopped cilantro, green onions, and peanuts for topping

Instructions

  1. Prepare the sauce by whisking together soy sauce, oyster sauce, water, sambal oelek, honey, ginger, lime juice, garlic, green onions, rice vinegar (optional), and cornstarch (optional) in a small bowl.
  2. Marinate ground chicken and chopped peanuts in about 3/4 of the sauce for 15 minutes.
  3. Soak rice noodles in warm water until softened; drain and rinse.
  4. In a skillet over medium heat, sauté the marinated chicken mixture in sesame oil until fully cooked (about 10 minutes).
  5. Add soaked noodles to the skillet and stir-fry for another 5 minutes.
  6. Assemble by scooping filling into lettuce leaves and topping with cilantro, green onions, peanuts, and reserved sauce.
