  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (Cool Whip), thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1½ cups chopped pecans
  • Pinch of salt

Instructions

  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9×13-inch baking dish and chill for about 10–15 minutes.
  2. In another bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix well. Fold in the thawed whipped topping until combined, then spread over the chilled crust.
  3. In a saucepan over medium heat, combine brown sugar, corn syrup, and butter. Stir until bubbling gently. Remove from heat and whisk in beaten eggs slowly to avoid scrambling. Mix in chopped pecans and salt; let cool slightly.
  4. Pour the cooled pecan filling over the cream cheese layer evenly. Cover the dish and refrigerate for at least 4 hours or overnight.
  5. Slice into bars using a warm knife before serving.
