  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • A few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your workspace by greasing baking paper on a tray and inserting bamboo skewers into each apple.
  2. In a saucepan, combine sugar, water, corn syrup, and black food coloring. Heat over medium until sugar dissolves.
  3. Stop stirring after dissolving and wash down the pot sides to avoid crystals. Cook until reaching hard crack stage (150ºC/310ºF).
  4. Dip each apple into the caramel mixture until fully coated, then place on prepared baking paper to cool.
