  • 1 cup canned pumpkin puree
  • ½ cup melted butter (or vegetable oil)
  • ¾ cup granulated sugar
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • For the glaze: ½ cup powdered sugar, 2–3 Tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a bowl, whisk together pumpkin puree, melted butter (or oil), sugar, egg, and vanilla until smooth.
  3. In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  4. Gently fold the dry ingredients into the wet mixture until combined.
  5. Fill muffin cups halfway with batter; add a spoonful of cinnamon swirl mixture on top and cover with more batter.
  6. Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
  7. Mix glaze ingredients and drizzle over cooled muffins.
