  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • 1 handful walnuts
  • ¼ cup extra virgin olive oil
  • Fresh thyme
  • Salt and pepper

Instructions

  1. Preheat your oven to 200°C/400°F.
  2. Peel and cube the butternut squash; place in an oven-safe dish.
  3. Add garlic (unpeeled), thyme, olive oil, salt, and pepper; mix well.
  4. Place feta in the center and drizzle with more olive oil; season.
  5. Roast for about 25 minutes until tender.
  6. Boil salted water and cook pasta according to package instructions; save some pasta water before draining.
  7. Mash roasted garlic into the pumpkin mixture; break up feta and stir.
  8. Combine with fresh spinach and cooked pasta; adjust creaminess with reserved pasta water as needed.
  9. Serve topped with chili flakes and walnuts.
