  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • 1 handful walnuts
  • ¼ cup extra virgin olive oil
  • 8 sprigs thyme
  • Salt and pepper to taste
  • Chilli flakes (optional)

Instructions

  1. Preheat oven to 200°C/400°F.
  2. Peel and cube the butternut squash, placing it in an oven-safe dish.
  3. Add unpeeled garlic, thyme, olive oil, salt, and pepper; mix to coat.
  4. Place feta in the center of the dish, drizzling more oil on top.
  5. Roast for about 25 minutes until pumpkin is tender and feta softens.
  6. Cook pasta in salted water during the last 10 minutes of roasting.
  7. Mash roasted garlic and crumble feta into the pumpkin mixture after removing from the oven.
  8. Add baby spinach and cooked pasta with reserved pasta water; mix well until creamy.
  9. Serve with crumbled walnuts and chili flakes if desired.
