  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham cracker pieces (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Mini vegan marshmallows (for topping)
  • Graham cracker pieces (crushed, for topping)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt; gradually add to the wet mixture until just combined.
  5. Fold in chocolate chips, mini vegan marshmallows, and broken graham crackers.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet about 2 inches apart.
  7. Press additional toppings into each cookie dough ball if desired.
  8. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  9. Allow to cool on the baking sheet before transferring them to a wire rack.
