  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1/2 onion, finely chopped
  • 1 pound (500g) ground beef
  • 2 tablespoons tomato paste
  • 2 tablespoons water
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 2 teaspoons cumin powder
  • 2 teaspoons paprika
  • 1/4 teaspoon cayenne pepper, or adjust to taste
  • 400g (14 oz) corn chips
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • nacho cheese sauce
  • sliced green onions
  • guacamole
  • pico de gallo
  • sour cream

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté garlic and onion until fragrant.
  2. Add ground beef; cook until browned. Stir in tomato paste and water along with spices (onion powder, oregano, salt, cumin, paprika, cayenne). Simmer for 5 minutes.
  3. In a baking dish, layer half of the corn chips followed by half of the beef mixture and half the cheese. Repeat layers.
  4. Preheat oven to 375°F (190°C). Bake nachos for about 10 minutes until cheese melts.
  5. Top with warm cheese sauce and desired toppings.
