  • 1 large shallot (finely diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons oil (avocado or your choice)
  • 1 teaspoon red chili flakes
  • 1 teaspoon gochugaru
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • ½ tablespoon black vinegar
  • ½ tablespoon brown sugar
  • Optional: diced scallions and chili crisp for topping

Instructions

  1. Boil water in a large pot and cook noodles according to package instructions until al dente. Drain and set aside.
  2. In a saucepan over medium heat, add oil. Once hot, sauté diced shallots and minced garlic for about 2-3 minutes until soft.
  3. Add red chili flakes and gochugaru; sauté for another 30 seconds without burning.
  4. Turn off the heat and mix in soy sauce, dark soy sauce, black vinegar, and brown sugar until well combined.
  5. Add the cooked noodles to the saucepan, tossing until evenly coated.
  6. Serve hot, garnished with scallions and chili crisp if desired.
