  • 1 1/2 lbs large shrimp (peeled and deveined)
  • 1 lb medium-thickness asparagus (trimmed)
  • 6 Tbsp butter (diced)
  • 4 tsp minced garlic
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 2 tsp lemon zest
  • 1 1/2 Tbsp fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your grill to medium-high heat (400 – 425 degrees F).
  2. Cut four sheets of heavy-duty aluminum foil (14 x 12 inches each) and lay them flat.
  3. Divide the shrimp among the foil packs, placing them near the center, followed by arranging the asparagus next to them.
  4. Pour 1/2 tablespoon of vinegar over each pack, sprinkle with garlic, lemon zest, salt, and pepper.
  5. Distribute diced butter evenly over all packets.
  6. Seal the packs tightly but leave some space for steam to circulate.
  7. Place sealed packets on the grill with the crimped side up and cook for about 9 to 10 minutes until shrimp is cooked through.
  8. Carefully unwrap each packet, drizzle with fresh lemon juice, garnish with parsley, and serve.
