  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon honey
  • 1/2 tablespoon sesame oil
  • 2 cloves garlic (grated)
  • 1 teaspoon fresh grated ginger
  • 1/2 teaspoon kosher salt
  • black pepper
  • 16 ounces trimmed NY strip steak (1 inch-thick, cut into 16 cubes)
  • 1 large head broccoli
  • 6 to 8 medium scallions (white and light green parts only, cut into 1 inch pieces)

Instructions

  1. In a medium bowl, whisk together the soy sauce, rice wine vinegar, honey, sesame oil, grated garlic, fresh ginger, and kosher salt. Season this mixture with black pepper to taste.
  2. Divide the marinade between two medium bowls. Add the cubed beef to one bowl and toss it thoroughly to coat. Let it marinate for about 30 minutes at room temperature. Alternatively, cover it and refrigerate for up to 8 hours for enhanced flavor.
  3. While the beef is marinating, separate the broccoli into about 16 florets. Each floret should measure around 1 to 1.5 inches. If any are larger than this size, cut them in half and trim their stems as needed.
  4. If you're using wooden skewers for grilling, soak them in water for at least 20 minutes before threading on your ingredients.
  5. Once everything is prepared: Thread one piece of scallion onto a skewer perpendicularly. Carefully add one broccoli floret onto the skewer. Follow with one piece of marinated beef. Repeat by adding another layer of scallion, broccoli, then beef until all ingredients are used up to create eight skewers.
  6. Generously brush each skewer with some reserved marinade from earlier. Lightly season with a pinch of salt and black pepper.
  7. For grilling: Preheat your grill on high heat. Cook each skewer until they reach your desired doneness—about 3 to 4 minutes per side will get you medium-rare results. Remember to brush them with remaining marinade while cooking!
  8. If you prefer broiling: Set your broiler to high heat with a rack positioned six inches away from it. Line a baking sheet with foil and arrange your skewers on it. Broil until cooked to desired doneness—around four minutes per side should suffice for medium-rare while brushing with leftover marinade.
