  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 1/4 cup plain yogurt
  • 2 tablespoons apple cider vinegar
  • Juice of 1 lemon

Instructions

  1. In a large mixing bowl, combine all the spices: cumin, paprika, turmeric, coriander, cinnamon, cayenne pepper, salt, and black pepper.
  2. Add olive oil, yogurt, apple cider vinegar, lemon juice, and minced garlic to the spice mixture. Stir until well combined.
  3. Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and ensure even coating. Seal or cover and refrigerate for at least 2 hours (overnight is ideal).
  4. Preheat your grill or oven to medium-high heat. Cook the marinated chicken until it reaches an internal temperature of 165°F (75°C), about 6-8 minutes per side on the grill or 25-30 minutes in the oven.
